Sunset Dinner Dallas Fish Market guests can now enjoy an exquisite Sunset Dinner created by Executive Chef Randy Morgan. Guests begin with a choice between Maine Lobster Corn Chowder and Caesar Salad, prepared with Romaine hearts, white anchovies, Parmesan cheese and roasted garlic croutons. For the main course, guests enjoy Grilled Hawaiian Swordfish, prepared with smoked almonds, golden raisins and browned butter, served with Israeli couscous and shaved fennel; or Grilled Scottish Salmon, served with house-made Spanish Chorizo, tomatoes and roasted garlic risotto; or Market Grill, the fresh market fish of the day served with market veggies and garlic risotto. For dessert, Chef Morgan has prepared a selection of three delights: the Beignet Trio, Bourbon Anglaise, Caramel Apples and Lemon Confection. The Sunset Dinner includes a glass of house wine. New winter seafood menu items include Pepper Crusted Columbia River Sturgeon with caramelized shallot redux, crisp pancetta, striped beets and parsnip puree; Seared Jumbo Main Diver Scallops with orange/vanilla bean emulsion, cucumber/parsley salad and gruyere dauphinoise; and Rhode Island Monk Fish with Yukon gold potato apple has, winter squash flan and wild mushroom jus. Beef fans can enjoy Grilled Beef Kabobs, served with crispy Israeli couscous, gold beets, eggplant, braised fennel and pomegranate molasses; or the American Wagyu Kobe Strip Loin. Featured side dishes are truffled/garlic frites and butternut squash risotto with Cambazola.
