The Love Shack is a risqué named burger and beer joint in Cowtown. It's located near the corner of Main and Exchange next to the White Elephant Saloon in The Stockyards. Some time last year Conde Nast Traveler magazine rated Love Shack one of The top 100 restaurants in the world. This year Esquire magazine ranks the Love Shack as the best burger in America. Really? That's huge. Tim Love is the owner, a self-taught, James Beard Award nominee with a personality as big as Texas. Despite his new found popularity, the guy remains humble. "I'm a cook. It's my job to make the burgers and keep the beer cold. It's your job to enjoy the food." So what's it take to be the best burger in America? "It took us five months just to create the blend of the meat." They only season the meat on the inside, never on the outside. It's seared on a flat top at about 520 degrees. According to Love, this method leaves just enough crust on the outside of the hand-formed meat patty and just pink enough on the inside. If you're a carnivore you'll understand. The Dirty Love Burger is the signature dish. If it sounds like an indecent proposal, it is. It's got a 50/50 blend of prime brisket and beef tenderloin. It sits on top of a Mrs. Baird's bun (why would you use anything else?). He uses real American cheese; house made pickles, shaved lettuce and heirloom tomatoes. It features wild boar bacon and a sunny-side up quail egg (more about this later.) And, of course the secret ingredient is the Love Sauce. What's in the Love Sauce? If I told you, he'd kill me. "Let me tell you something Henry, everything I do is healthy. If it makes you smile, it's healthy, baby." I had my doubts, but this burger is crazy good. I love all the greasy drippings. I'll never eat a burger anywhere else (ok, not anytime soon anyway). "If you ever eat a burger you don't need a napkin to eat with, get up and leave." You need to know a few things before you go there's no a/c, no table service, no credit cards, no kidding. Oh yeah, almost forgot, try the root beer, too. You'll need something to wash down the best burger in America. |
